Fans of Executive Chef Alvin Leong’s heritage flavours can relish the fiery and fragrant Sambal Stingray, along with the new Peranakan specialty – Buah Keluak Black Duck, a robust and aromatic dish that complements the well-loved selection of local classics.
For a change of pace, the Western selection offers a hearty Risotto featuring Lobster on weekdays and Sea Urchin on weekends, tossed in a Parmesan wheel for enhanced flavour. Guests can also savour sizzling favourites from the Josper Grill, and take their pick from charcoal-grilled Mud Crab, Octopus, Lobster, and Tomahawk Steak, freshly hand-carved upon request.
The feast continues at the dessert station with the addition of a Trio of Chocolate Fountains and a warm, luscious Hazelnut Chocolate Pudding. Adding a touch of tableside theatrics, guests can enjoy Nitrogen-frozen Mousse Lollipops and timeless Crêpes Suzette, prepared à la minute.
